Banana Coffee Cake

One day I saw a recipe for a luscious looking banana cake, and decided to create an even better cake with a streusel topping.

This banana coffee cake is very easy, and I had most of the ingredients in the cupboard already. If you have about three overripe bananas then consider making this cake as well.
How to Make it:
Here is how my sister and I made it.
Preheat the oven to 350 degrees Fahrenheit.
Start with mashing up the bananas until there are no more chunks. You can put them straight in a large bowl, but I used a measuring cup so that I knew the exact amount. Our three bananas came to about 1 ½ cups.
Lightly beat the eggs in a smaller bowl, afterward combining all the wet ingredients together with the bananas, making sure all is combined.
Mix the dry ingredients together in a separate bowl.
Combine the dry ingredients and the wet. Fold until well mixed.
For the Streusel topping, cut up the butter into chunks, and sift the dry ingredients carefully with the butter. Mash with a fork to make it crumbly.
Grease an 8” square pan.
Spread the batter into the pan. Sprinkle the cinnamon streusel mixture over the batter.
Bake for 35-40 minutes or until the cake is set. (A tip for you, use a thermometer instead of a toothpick to check the cake, and if the cake has reached 205 degrees Fahrenheit/97 Celsius, it is done! This cake is great a bit moist anyway.)
Serve with your favorite coffee, or a dollop of homemade ice cream!

Although it does not contain coffee, this banana coffee cake is perfect for breakfast with your morning coffee, any time of year!
Ingredients
- Wet Ingredients:
- 1 ½ cup (3 large) ripe bananas, mashed
- 2 eggs, lightly beaten
- ⅓ cup oil
- 1 teaspoon vanilla
- Dry Ingredients:
- 1 ½ cups all-purpose flour
- ⅓ cup white sugar
- ⅓ cup brown sugar
- ¼ teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- Cinnamon Streusel Topping:
- ¼ teaspoon nutmeg
- ¼ teaspoon cinnamon
- 3 tablespoons butter
- ⅓ cup brown sugar
- ¼ cup flour
- ¼ cup flour
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Mix the wet ingredients together until well-combined.
- Sift the dry ingredients in a separate bowl.
- Combine the dry ingredients to the wet and fold until well mixed.
- For the Streusel topping, cut up the butter, and sift the other ingredients carefully with the butter. Mash with a fork it to make it crumbly.
- Grease an 8" pan.
- Spread the batter into the pan.
