Green Pepper Pico Salsa

Making salsa is a great way to use your summer veggies, when you’ve got a lot to use before they spoil.

The word salsa means “sauce” in Spanish. Salsa can be cooked or fresh, and the varieties are many. Cooked salsa has its own appeal, usually consisting of more liquid than the fresh variety.

My sister and I had a lot of tomatoes and a green pepper to use, so we made this fresh salsa, not taking the time to cook it.

Non-cooked or fresh salsa is called “Salsa Fresca” or “Pico de Gallo” (which means “rooster’s beak” in English). Pico salsa is usually a chunky variety of salsa (and that was just what we wanted).

It is wonderful for a snack, or as part of your breakfast burrito, salad, eggs, or just with tortillas.

Sometimes we throw in a cucumber and small banana peppers. If we don’t have them, we simply use whatever we have.

We used a variety of tomatoes in this batch, including small yellow and red, but again, you can use whatever you have on hand.

We start with a large green pepper. Then we add roughly the same amount of tomato. As you can see, we used a bit more green pepper than tomato.

With the large green pepper, and several small yellow and red tomatoes, we added about ¼ of a large white onion. We diced all of them into larger pico-style chunks.

We took a handful of cilantro, washed and minced it. I really feel cilantro makes the flavor so much better. If you don’t like cilantro, you could replace it with celery leaves, basil, onion powder or more garlic powder.

Once we had all the veggies and cilantro together, we put a dusting of garlic powder across the top. Start with just a little garlic powder, then sample and adjust it to your taste. You can also add some lime juice if you’d like a little extra tang.

That is it, it really is simple but so good. It will add a pop to any meal!

Green Pepper Pico Salsa

Ingredients

  • 1 large green pepper, diced
  • ¼ a large white onion, diced
  • 2 large red tomatoes (or a mix of yellow and red), diced
  • 1 handful of cilantro, minced
  • Garlic salt to taste
  • Lime juice to taste (optional)

Instructions

  1. Mix all the diced vegetables and minced cilantro together.
  2. Dust the top with garlic powder.
  3. Sample and adjust to your taste.
  4. Add lime juice if desired.
  5. Eat with tortilla chips or as a condiment to your favorite meal!
